Future Food Trend: Poutine

The duo fell in love with poutine while spending time skiing in Canada where they discovered the dish. Upon noticing the lack of poutine in the UK they decided to have a go at producing it themselves! As shown above, their menu has strayed from the original chips, cheese curd and gravy to include ingredients like sour cream, bacon, pulled pork, cabbage, stilton and sausage. Having tried it myself I can vouch for its deliciousness!
Caribou Poutine are at a number of street food events around Birmingham over the summer including Digbeth Dining Club and further afield at One Love Festival in Wiltshire from the 4th to the 6th of September. The pair are currently working on some new tasty additions to their menu, ‘The Veggie Nacho’ which tops chips with sour cream, salsa, guacamole and jalapenos and a One Love Fest special of pulled goat, chilli jam and radish. Nowadays, our culinary options are endless. All sorts of food combinations have been created and dishes from all over the world are readily available at your local takeaway or supermarket. But with so much choice are there any foods left that are yet to come to the foray of public consciousness? Poutine might just be one of them.
Poutine is a Canadian delicacy that, in its simplest form is made up of chips, gravy and cheese curd which is similar to hard cheeses like halloumi and mozzarella. It’s so popular in Canada they even have it on their McDonalds menu! Canada’s own poutine restaurant chain, Smokes Poutinery, has recently opened several branches in North America which have become extremely popular, proving that the dish is on the rise.
And thanks to University of Birmingham students Elizabeth Hurst and Michael Palfreeman, we are now tasting poutine here in the UK! Dissatisfied with their uni courses Micahel and Elizabeth decided to put all their money and effort into creating Caribou Poutine, a streetfood business focused around their love of the Canadian Delicacy.
