Bake Off Special: Banana and Walnut Loaf

Bake Off’s back! If you’re anything like me, watching this show will give you an uncontrollable urge to... well… bake, sadly coupled with the knowledge that you will never be able to recreate the many-splendored cake creations on your TV screen. Never fear – here’s a recipe to satisfy your cravings that’s easy enough to make at home.
Banana and Walnut Bread
Ingredients:
50g butter
250g caster sugar
2 eggs
2 bananas, the riper the better
250g self-raising flour
Tsp bicarbonate of soda
1/4 teaspoon nutmeg
160g walnuts (or ingredient of your choice – pumpkin and sunflower seeds or dark chocolate also works well)

Preheat the oven to 180°C

Cream the butter and (sifted) sugar

In a separate bowl, mash the bananas. Add the eggs and beat. Add to the sugar/butter mixture and stir thoroughly (to save time use an electric mixer if you have one at your disposal).

Fold in the sifted flour, bicarbonate of soda and nutmeg.

Add the walnuts and pour the mixture into a standard loaf tin.

Cook for 40-60 mins. It’s done when a sharp knife stuck into the centre comes out clean.
Best enjoyed warm – eat it fresh from the oven or toasted under the grill and slathered in butter.
